Garibaldi Bars

Makes 16 two-inch bars

I call these Garibaldi Bars because they remind me of the flat, flaky raisin cookies (Garibaldi biscuits) that I loved as a child. This grown-up version is sugar-free, oil-free, and vegan.


1 cup whole-wheat flour

1 cup old fashioned rolled oats

1/2 teaspoon salt

1/4 cup unsweetened applesauce

1 1/4 cup raisins, finely chopped

1 cup walnuts, finely chopped

1/2 cup water


  1. Preheat oven to 350F and line an 8” square pan with parchment paper.

  2. Blend the flour, oats, salt, and applesauce in a large bowl until evenly mixed. Add raisins, walnuts, and water and mix thoroughly until well-blended and the mixture holds together.

  3. Press firmly into the prepared pan. Bake for 30 minutes. Cool slightly. Cut into 16 two-inch squares while still warm.
