Salted caramel almond energy bites

These are just right when you need a quick snack or a not-too-sweet sweet. They make a nice addition to a holiday dessert table or cookie exchange. I keep some in my car for days when I’m too busy with real estate clients to eat a proper lunch. Feel free to substitute pecans or walnuts for the almonds.

Makes 10-12

1/2 lb pitted Medjool dates

1/2 cup plus 2 tablespoons sliced, raw almonds

1/2 cup golden flaxseed meal

1/2 cup old-fashioned rolled oats

1 teaspoon pure vanilla extract

1/4 teaspoon pure almond extract

1/4 teaspoon sea salt

  1. Toast the 2 tablespoons of almonds in a preheated 350F oven for 5-10 minutes until golden brown. Chop them roughly, mix with 1/8 teaspoon of the sea salt, and set aside in a small bowl.

  2. In a food processor, combine the dates, 1/2 cup almonds, flaxseed, oats, extracts, and remaining 1/8 teaspoon salt. Pulse just until it forms a dough that sticks together, being careful to stop before it turns into a paste.

  3. Form into 10-12 balls by dividing dough with a small scoop or a pair of spoons, and then rolling between your palms. Roll each ball into the reserved chopped almonds/sea salt mixture.
