Vegan Parmesan-style cheese

You’ll want to sprinkle this magical fairy-dust on everything! It takes only 5 minutes to make, stores easily in a screw-top jar, provides a healthy dose of vitamin B12 in the form of nutritional yeast, and imparts a delectable, umami-rich cheesiness to everything it touches. Add it to pasta dishes, salads (especially vegan Caesar), grain bowls, avocado toast, vegetables, and popcorn— but don’t stop there. I keep a small jar of it in my purse and always pack a larger jar when I travel.

Makes 1 and 1/2 cups or 10-12 servings


1 cup raw cashews (or sunflower seeds)

1/3 cup nutritional yeast

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt


  1. Place all of the ingredients in the bowl of a food processor or blender. Process until until it has a uniformly, fine, mealy texture and looks like coarse sand.

  2. Store mixture in an airtight jar for up to 2 weeks.
